Mediterranean loaf non traditional focaccia. I like mine on the fluffier side rather than more flat.
Sourdough focaccia 100g starter 512g flour 12-15g salt 460g water Olive oil Sun dried tomatoes Roasted garlic Green olives Feta Rosemary

Add warm water to bowl 460g Add in 100g starter hydrated mix with a dough whisk 512g of flour added and 15g salt mix to shag dough Let sit for 30-60 minutes. Use water on hands to combine into a ball inside the bowl. Add olive oil and let sit for 30 minutes. Repeat 2 more times Let sit for 8-12 hours on the counter until doubled. Flip out onto a lightly floured surface poke out bubbles strength and fold and form into a ball. Add to a greased 9×13 in glass pan. Let sit for 60 minutes and poke down focaccia and spread it some in the pan. Let sit for another 1-2 hours. Preheat oven to 425 Add toppings of choice (roasted garlic, green olives, sun dried tomatoes, feta, dried rosemary) plus olive oil Bake for 30-35 minutes
