Hi barkers! I need help understand what I did wrong here. I have made this same recipe of pumpkin bread multiple times and this time it came out like this. I would prefer if this never happened again 😅

I’d say the leavening agents expired or were missed in the recipe!

Possibly the liquids or flour were mismeasured/off, or you forgot the leavening ingredients. I am leaning towards mismeasured ingredients, or something changed with the liquid part of the recipe. Do you use canned pumpkin? Did you use a different brand than usual, and it actually had more in the can? Quantity varies between brands. Same thing with fresh pumpkin. The water content between pumpkin and varieties also differs.
If you are using cups as a means of measuring, I suggest moving over to gr and ml. This will greatly improve baking accuracy.

I’ve noticed some recipes for pumpkin bread , cakes, muffins, and biscuits/cookies refer to boiling the pumpkin or using Canned pumpkin. I think both of these make a wet pumpkin puree, and the degree of wetness is variable.
I’ve found it is more reliable to bake the pumpkin in baking paper until a knife pierces the flesh easily. I cut a large piece of pumpkin into several smaller pieces and leave it on the skin, and wrap the lot in baking paper. Place it on a tray and bake at 180 degrees C/356F.
Once it is baked, let it get completely cold, then scrape off the skin, then weigh/measure out the quantity required. I handle sweet potato the same way.

You didn’t use a kitchen scale. That helps with consistency. Turned out great last time, what happened!? Volumetric measuring got in the way.
Which baking powder are you using? Something wasn’t happy. Clabber Girl Double Acting is really the only baking powder in the United States. I ignore everything else except for that. If they don’t have it at the store then I go to a different one.
I agree with the possibility that it was over mixed.

I’ve had this exact thing happen. You used baking powder instead of baking soda. Easy mixup to make, does not provide the leavening to the dough

This is my go to pumpkin banana bread recipe, give this one a shot. I’ve made it countless times & my bakes always come out delicious
I think you thought you put in the baking powder, but actually had a brain fart moment and it never got where it was supposed to go. That definitely looks like no leavener in the dough.
Second thing was either too much oil, or not enough flour. Overmixing would make a very tough bread, but it would still rise and look a bit dry on top.
I’ve forgotten stuff like that now and then and I’ve been baking for over 50 years. No shame in it…. it happens. (and there were times when I SWORE I put it in! Truly did think it was in there!)

What recipe are you using? Looks like several things here, baking powder amount, over mixing, wet to dry ingredient ration messed up, and did you follow the recipe precisely or did you riff a bit here and there?
But start off with the recipe and what you did. A recipe that demands 2 tablespoons of baking powder makes it a highly questionable recipe.

I had this issue recently too. For me, i narrowed it down to i either overmixed it, i swapped out ingredients (my milk was bad so i used half & half), or my pumpkin puree was too wet. But yeah, pumpkin bread can be fickle like that😅
