This is my favorite cake, I make it for myself for my birthday every year. Also, if you sub out the coconut milk for regular milk, it makes an excellent white cake.

Love the cake but I swap the cream cheese frosting and make a coconut ermine buttercream. It’s heavenly for a coconut lover.

Ohhh I’ve made this cake for work a few times and someones even bought one off me, its really an amazing cake! I like to leave the dessicated coconut out of the icing to give it a smoother texture and also put a thin layer of lemon curd between each layer. The lemon adds a great touch
