Recipe

Ingredients

• 2 chicken breasts
• 4 tbspn Harry Fried Chicken Spice (or just use Salt, pepper, Italian herb mix and parmesan)
• Flavourless cooking oil
• 2 cups panko crumbs
• 2 cups plain flour
• 4 eggs
• 2 cloves of garlic, diced
• ½ an onion, diced
• 2 cups of passata
• 50ml white wine or chicken stock
• Basil
• Ham
• Mozzarella
• Parmesan
• Frozen chips (optional and encouraged)

Directions:
• Butterfly the chicken breast and add generous salt and HFC spice because covering with plastic and bashing it out to a consistent thickness and leaving it in the fridge for 1-4 hours
• Fry the onion in a small amount of oil on medium heat until it becomes fragrant, then add the garlic and fry tom both until they slightly brown, then add the white wine and passata and simmer for 20min or until the sauce is quite thick.
• Get 1 plate with 1 cup of flour and 1 tbpsn HFC, 1 bowl with the eggs beaten in it and another plate with 2 cups of panko crumbs with 2 tbspn of HFC in it.
• Dust the chicken in flour, then egg wash, then the panko crumbs to it’s evenly and thickly coated in crumbs.
• Add oil around 1cm deep in a frypan and hat to 160-180deg (or hot enough to make a stick bubble around it (if you’re making chips, get these on at the same time) and drop your chicken breast in – the top of the chicken should be clear of the oil. Fry it for around 8 minutes or until golden brown and then flip.
• Once it’s flipped and frying the other side add a layer of the tomato sauce on top, then ham, then mozzarella and parmesan and place a lid or metal plate over the frypan to trap the heat in and melt the cheese. Fry for another 5 minutes.
• Remove from the oil and serve with a side salad and chips.

  1. ATTN: NETWORK RV CARAVAN OWNERS

    Apologies for using this thread for my message, but I need to send out a clear and urgent message.

    I've had a Victory caravan made by Network RV for near on 12 months now.

    After 4 months, there was a fire with the electrics due to a bad connection and they had wires running everywhere. I had it repaired by a licensed auto-sparky who did a fantastic job and replaced the inline fuses too, as Network RV installed cheap ones.

    Network RV also installed a faulty sway controller and failed to test it prior to handover. I got this repaired at my 1st service.

    There's also issues with the electronic brakes, where the brakes periodically come on, but the rest of the time are off!! I had already gone through a set of pads on my new ute at 12k when I very rarely use the brakes themselves, as I use manual shift religiously.

    All the silicone from around the van began peeling off after a week or 2 and I could see into the van itself as the walls had began to bulge out!!!

    This further caused internal issues such as walls buckling, drawers getting stuck, cupboards bowing, walls bowing, windows vibrating and becoming loose, shower screen buckling etc

    The end resulted in my caravan requiring being striped to the chassis and everything being rebuilt as Network RV had used MDF as a cheap way out of constructing the van correctly to save on costs and build more profits.

    As a full-time wanderer myself, I was promised 2 weeks only for the repairs to next week be the 11th week since dropping the van off!!! No BS They are yet to even look at my brakes, although I've been told 2 weeks ago the van was ready to pick up!!!

    They've been sitting on my van and delaying the repairs so the warranty period expires, as they've already confirmed in writing to me, they are not extending my warranty under any circumstances

    Both the Dealer, Fair Dinkum Caravans and Network RV, have refused to assist with housing me for this amount of time, nor did they initially want to accept any liability prior to me just turning up on the Dealer's doorstep unannounced one morning as I was sick n tired of the games they were trying to play. My emails included the owner of the company and do you think he has had the decency to respond or apologise to me?

    I did contact NSW Fair Trading and ACCC who are powerless, as the mob have made attempts in repairing my caravan and there's not yet a Regulatory body to enforce any law upon them. My next move was to contact ANCAP.

    I'm writing this here for anyone who owns a Network RV caravan to CHECK your caravan BEFORE your warranty expires. Once expired, you're on your own and Network RV know this and are screwing their customers over, like me. As I understand, it's caravans built in the last 12-18 months.

    Please get the word out before it's too late.

  3. Salad, what salad? So many things to comment on in this one! Dolphin looked like he was in 7th heaven. The parmi looked amazing, have just had to place our order for HFC, cause our h16 is hopefully a month off now so need some for the shake down trip home. Love the new table too, the step down shelf works well.

  8. Hey Harry, I was thinking, could you have strapped a winch/strap to a tree off to the front right and pulled the van back on centre upright and then pull it forward?
