Hi everyone! Today, I’m making two Turkish classics: Antalya Piyaz and Burdur Şiş Köfte. In just 20 minutes, we’ll grill juicy köfte and make a refreshing piyaz salad with tahini and beans. It’s a quick and delicious way to bring the taste of Turkey into your home.

Şiş Köfte and Piyaz

For the köfte:
300 gr single ground beef (from around ribs with fat)
100 gr single ground lamb
½ teaspoon salt
1 pinch black pepper
1 pinch thyme

For the piyaz:
4 tablespoons tahini
2 tablespoons vinegar
2 tablespoons water
1 tablespoon olive oil
1 pinch salt
2 pack (400 gr) boiled beans
1 red onion, sliced
2 tomatoes, diced
10-15 sprigs of parsley, chopped
2 hard boiled eggs (optional)

For serving:
Pita bread
Tomatoes, quartered
Pepper
Onion, cut in circles

●First heat the cast iron pan.
●Then for the piyaz, combine tahini, vinegar, water, salt, and olive oil in a bowl. If the sauce is too runny, add the thicker part of the tahini and mix well.
●Place the strained boiled beans into the sauce. Add onions, tomatoes, and parsley to the beans, mix all well.
●You can optionally add boiled eggs to the piyaz for the authentic Antalya version. If you want to keep it vegan, skip the eggs.
●To make the köfte, mix the beef and lamb together. Ensure the meat has some fat, as it will melt during cooking and give the kebab its signature flavor.
●Add salt, black pepper, and thyme to the meat mixture. Knead the mixture well.
●If you don’t have metal skewers, you can use wooden chopsticks.Flatten the ends with a stationary knife, if round. Soak them in water for at least 4 hours beforehand to prevent them from burning.
●Take small portions of the meat mixture and mold them around the skewers. Wet your hands slightly to prevent the meat from sticking. Shape the köftes on a plastic wrap and press down gently to give them a uniform shape.
●Place the skewers in the pan. As the fat melts, it will release its flavor, creating a slight smoke. You can also roast tomatoes, peppers, and onions in the pan alongside the kebabs for extra flavor.
●Serve the traditional köfte and the piyaz with some pita bread and enjoy this beauty with your loved ones!

  5. Mediterranean salad🥗 I bought Tahini, but I didn't like its taste in Hummus . Perhaps I should add a bit of vinegar and more lemon juice. I'd liked more Hummus with peanut butter. Thank you.
