250F until internal 120, then I seared it 30 seconds each side twice.

Turned out slightly more cooked than I would prefer because I’m paranoid about the butter and thyme burning, so when I did it at the end, the steak was on the pan for 45 seconds longer with the heat off. But it was so fatty from the start that I think closer to medium was the right call.

    Alright. The consistency in which you cut that perfectly cooked steak is absolutely asinine. It ranges from a 10mm cut to 14mm cut; a child could execute better quality control than you! Becky The Chimpanzee cut better slices of pretend play-doh *POOP* than you did and that’s *after* her lobotomy.

    …AND the lettuce is bland.
