    Thanks! I never seen a cookie recipe for cutting out the cookies after baking. I’m going to look at my old cookbooks closer.

  2. I learned to roll the dough on an overturned cookie sheet. On the bottom there are no edges to interfere with the rolling pin and you can still use cookie cutters. You don’t have to move the cut cookies to the baking sheet, just remove the excess dough and there you go.
