I try to keep my meals more ‘fresh’ by cooking the quesadillas/peppers day of, and adding the milk to my oats the night before. I feel like it masks the fact your food has been sitting in the fridge all the week. Have a great week preppers!

Ingredients:
Overnight Oats:
– 1/3 cup oats
– 1/3 cup milk
– 1/3 cup yogurt
– cut up fruit
– chia seeds
– sliced almonds
Stuffed pepper filling:
– ground beef (750g 4 servings)
– basmati rice (1 cup 4 servings)
– mushroom
– baby spinach
– diced tomatoes
– small amount of tomato sauce
– seasonings
– baked in a bell pepper with cheese on top
Quesadilla filling:
– chicken breast (1 breast = 2 quesadillas)
– baby spinach
– red pepper
– mushroom
– green onion
– cheese
– tortilla
