Cut the steak down the center so it makes a heart, salt all sides and sit on rack in fridge for 1 day. Smoke at 225° until internal 125°(took 45 minutes), pull off and set recteq to full(900°). Sear each side for 30 seconds.

    Oh nice. I like the creative cut. Recently saw a butcher do a short rib “lollipop” which I’d like to give a go at doing.

  6. Looks almost perfectly cooked, but I dislike smoking steak. Ends up tasting like beef jerky and the smoke overpowers the flavor. It’s good enough as is IMO.
