I just got some new ovens and I did not expect such a dramatic difference in how well my loaves are baking now. Beautiful reddish brown crust and great oven spring. Sold 40 of these on Sunday before the market ended along with 32 focaccia, and 48 Apple Cinnamon loaves. A very successful week and a great last outdoor market of the year for me.

Recipe:

475g total flour
25% whole wheat flour
78% hydration
20% starter (100% hydration)
2.3% salt
