Any ideas on what I should do with these cuts of beef?

My gf called me from Whole Foods and said they had flat irons on sale so I told her to grab a few pounds. I am pretty familiar with it working in restaurants, but when she showed me this is what she got. I am used to a thinner cut without the thick fat line on the middle or the fat on the edges. These are all super thick pieces. What would anyone suggest for this? I am not really sure what to do with it, I usually dont sous vide the flat irons I bring home from work but these are definitely going to need a method like a braise of sous vide. What do you all think?

You will have to slow cook those to break down the gristle in the middle. It will turn into a flavorful jelly when you do though.

Extract the tendons in the centre and use them to make pho. Sous vide then grill the rest. You may still want a somewhat long cook for a steak.
