Colorful layers of fresh vegetables and garlicky tomato sauce. This baked veggie casserole is a perfect comforting dish to accompany any meal.

Preheat oven to 375°. In a deep dish pie plate or casserole dish mix the following.
1-2 C tomato sauce (15oz can)
2 cloves garlic, minced
1/2 tsp thyme
1/2 tsp chili flakes
1/2 tsp oregano
1/2 tsp basil

Thinly slice with mandolin or sharp knife
1 yellow squash
1 small zucchini
1 red bell pepper
2-3 potatoes
2-3 tomatoes
eggplant is good too

take one of each slice of veggie and stack like cards in the sauce, in a spiral. Top with salt and pepper and Extra virgin olive oil. Bake covered for 40-50 minutes until all veggies are tender.
