Chuck AKA Sir Charles in fajitas.

11/10, absolutely stunning. Fat was fully rendered, so made the meat very flavourful and moist in a wrap.

600g chuck – salt and pepper – bagged.
24h at 54c (130f)
Out the bag – dry – apply rub.
Rub: Salt, pepper, paprika, cumin, garlic, onion, cayenne.
Fry in a super hot pan.
Slice and smash.

Sides: home made salsa, home made bbq sauce, roasted onions and peppers.
