I didn’t get the crackly top I wanted for these brownies so I covered them with icing sugar or marshmallows instead.

    failed like a fox. excellent recovery.

    if you want the crackly top you have to completely dissolve your sugar. this can happen by mixing extensively, using powdered sugar or granulated sugar you pulse in a food processor or by letting the brownie batter hydrate for a while before putting into the oven. one way or another the sugar has to dissolve and rise to the top to make the proper crinkle.

    I beat my eggs and granulated sugar for seven minutes and get a nice crackly top. I have read about resting the brownie batter. I am going to give that a try as well.

    That being said, these brownies are fabulous!

  4. Browned butter condensed milk brownies always give a crackle top. Hard to mess that one up
