409 cal (26 g protein). Garlicky green beans & carrots, potatoes, Meati crispy cutlet, corn on cob. One of my favorite meals.

    Potatoes were microwaved, added a spritz of grapeseed oil, then finished in on the stove in non-stick pan.

    To cook green beans:

    1. microwave a couple minutes till slightly tender
    2. spray with olive oil and pan fry till a little browned
    3. add approx half a cup of concentrated vegan chicken broth and 1 tsp of Tabitha Brown’s “Like Sweet Like Smokey” seasoning (which has garlic in it), and salt to taste, and cannellini beans
    4. cook until broth is mostly evaporated and absorbed by the green beans.
