Ingredients:
1 lb 90% lean ground beef or ground turkey
1 can (6 oz) tomato paste
1 medium yellow onion, finely chopped
1 cup finely chopped bell peppers (red, green, yellow)
3-4 minced garlic cloves
1 can (4 oz) canned diced green chiles (hot, mild, or a mix)
1 can (14.5 oz) canned fire-roasted diced tomatoes
1 can (15 oz) tomato sauce
2-3 tbsp chili powder (adjust to taste)
1 tsp ground cumin
1 tsp dried oregano
Kosher salt and black pepper to taste
Optional: shredded cheese, sour cream, or fresh cilantro for serving
Directions:
1. Brown the meat and drain the excess fat.
2. Sautee the Onions and Peppers for 5 minutes.
3. Mix the onions and peppers with the meat and cook for 2-3 minutes to let the flavors bloom.
4. Add to a crockpot
5. Add Seasonings: Stir in the chili powder, ground cumin, dried oregano, salt, and pepper. Cook for another minute to let the spices bloom.
6. Incorporate Other Ingredients: Add the tomato paste, diced green chiles, fire-roasted diced tomatoes (with juice), and tomato sauce. Stir well to combine.
7. Cook for 4-5 hours on low heat
8. Serve: Ladle the chili into bowls and top with shredded cheese, sour cream, or fresh cilantro if desired. Also great on Chili Dogs.

Keep up the weight loss Frank, because the only thing chili is going to do for you is make you gain weight while taking massive shits.
