(Turkish Stuffed Eggplant) Recipe

4 large eggplants
250g ground beef (or lamb)
1 large onion, chopped
2 cloves garlic, minced
2 tomatoes, finely chopped
2 green peppers (or banana peppers), sliced
1 tablespoon tomato paste
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil (for frying)

Instructions:
Prepare the Eggplants:

Start by peeling the eggplants in a striped pattern. Leave some skin on to help hold the shape.
Soak the eggplants in salted water for 15-20 minutes to remove bitterness, then dry them thoroughly.
Heat olive oil in a large pan and lightly fry the eggplants until golden on all sides. Remove from the pan and set aside.

In the same pan, sauté the chopped onion and garlic until soft.
