Don’t buy pork too often but wanted to make some Katsu. The marbling has me shocked, never seen chops like this before. Bogo here so I tried to find a second similar one but no luck. Good for comparison sake though. Before and after dry brine with salt.

    There’s always a few chops on a pork lloin that are well marbled like this. Closer to the shoulder. They are very tasty but not super tender make sure to give em a good whacking. You may want to make them a little thinner than your leaner loin pieces

    Anywhere else and yes. At Publix prices that should be the standard.

  5. In my area, can buy a whole pork loin for less than $2.79 a lb. Then cut up into exact same chops. Can sharpen that knife right up and save $$$

    The ones on the left look awesome ! The right is ok. Price per pound a little steap for commodity pork.
