The Best Classic Meatloaf Recipe

Malcom’s Classic Meatloaf Recipe
– 1lb ground beef 90/10
– 1lb ground pork
– 2 eggs – lightly beaten
– 1 1/2 cup bread crumbs
– 1 medium onion finely diced
– 4 cloves minced garlic
– 1/4 cup chopped flat leaf parsley
– 1/4 cup ketchup
– 1 Tablespoon Worcestershire sauce
– 2 Tablespoons Killer Hogs AP Seasoning
– 1 Tablespoon Malcom’s Italian Stallion Seasoning

Classic Meatloaf Glaze:
– 1/2 cup ketchup
– 1/4 cup brown sugar
– 1 Tablespoon Worcestershire sauce
– pinch white pepper
– pinch cayenne pepper
– pinch paprika

Directions:
1. Combine the ground beef, ground pork, eggs, bread crumbs, onion, garlic, and parsley by hand. Add the ketchup, worcestershire and seasonings and mix thoroughly.
2. Line a baking sheet with parchment paper and form the meat mixture into a loaf shape.
3. Cook the meatloaf at 350°F using pecan pellets for 35 minutes – you can cook it in the oven if you prefer.
4. Combine the glaze ingredients in a small bowl and brush over the top of the meatloaf. Continue to cook for an additional 25 minutes or until the internal temperature reaches 165°F.
5. Remove the meatloaf from the grill and allow it to rest for 10 minutes before serving.

  1. Nice. Regardless of seasoning and other ingredients, including pork is a MUST, IMO. Meatloaf, burgers, meatballs, etc, etc I always use a ground beef/pork mixture from local butcher. Freestyle idea is neat but prefer using loaf pan, especially when making a stuffed meatloaf. Line loaf pan with plastic wrap, pack in the meat mixture, then flip it out onto wire rack. Perfectly molded and get smoke on all sides

  2. Substitute W sauce for ketchup and the classic worcestershire sauce in the meat. I think you will like it.

  3. The ketchup-based glaze is my issue with this – everyone does a ketchup-based glaze on meatloaf. I want something original. Looks great otherwise.

  4. Mannnnn smoked meatloaf is the best, a normal meatloaf sandwich is incredible but you add that smoke flavor and it's outta this world. Your recipe apart from the glaze is identical to my moms, except she would add some plain yellow mustard to the mix, and it was the same recipe her mom used. My dad's side of the family also has a family meatloaf recipe, though I've never made it, but it's kind of funny how meatloaf is one of those classic american "family" recipes. All I know is it's time to smoke some meatloaf this weekend, can't wait to try out your glaze!

  6. I eat keto meatloaf constantly. Going to try this but drop breadcrumbs and use Pork Panko. I use low carb bbq sauce instead of ketchup. And of course in Texas a spoonful of diced jalapeño relish. Not using pork though. Until now. Definitely going to try. Only had a couple of BAD meatloafs in my life.

  9. Malcolm, I don't recall you doing this when I first became aware of your channel, but please, pretty please with some bbq sauce on top, do not add any music to your dialogue track. I ask other YT hosts to not have any music in the dialogue track. The music gets kinda distracting. Thanks.
