👨‍🍳 Ingredients You’ll Need:

Chicken Marinade:
Boneless, skinless chicken thighs – 1.2 kg
Turmeric – 1 tsp
Black pepper – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Salt – to taste
Lemon juice – ½ lemon

Cooking Lemon Chicken:
Onions, sliced – 2 medium
Green bell pepper, sliced – 1
Ghee – 2 tbsp
Cinnamon stick – 1
Green cardamom pods – 2-3
Black cardamom pods – 2-3
Whole peppercorns – a few
Cumin seeds – 1 tsp
Cloves – 1 tsp
Ginger & garlic paste – 2 tbsp
Slit green chillies – 3-4
Kasuri methi (dried fenugreek leaves) – 1 tsp
Lemon juice – 1 tbsp
Lemon zest – from 1 lemon
Water – as needed
Rich’s Versatie Gold cooking cream – to taste
Jaggery powder – pinch
Chaat masala – pinch
Lemon juice (for finishing) – ½ lemon

For Fruit Cream:
Assorted fruits (cut into cubes):
Kiwi
Chiku
Dragon fruit
Mulberries
Sitaphal (custard apple), pulp only
Rich’s Versatie Gold cooking cream (to taste)
Cardamom powder (elaichi) – 1tsp
Honey (to taste)
Pomegranate seeds and mint leaves (for garnish)

Process:
• Marinate the Chicken: Mix the chicken with turmeric, black pepper, coriander powder, cumin powder, and salt in a bowl. Add the juice of ½ lemon, mix well, and set aside.
• Prepare the Base: In a vessel, heat 2 tbsp of ghee. Add the cinnamon stick, green and black cardamom, peppercorns, cumin seeds, and cloves. Fry for a minute until fragrant. Add sliced onions and sauté until they become translucent. Stir in the ginger-garlic paste and cook until the raw smell disappears.
• Cook the Chicken: Add the marinated chicken to the vessel and saute well. Season with salt as needed. Let the chicken cook for a few minutes. Add slit green chillies and sliced green bell peppers. Mix well. Season lightly with salt, then add kasuri methi, lemon juice, and lemon zest. Stir to combine. Add a little water to create a sauce and let it simmer for 8-9 minutes.
• Finish the Dish: Stir in Rich’s Versatie Gold cream, jaggery powder, and chaat masala. Adjust lemon juice to taste. Squeeze in the juice of ½ lemon, cover, and let the flavours meld.
• Prepare the Fruit: Combine the cubed kiwi, Chiku, dragon fruit, mulberries, and Sitaphal pulp in a bowl.
• Make the Cream: In another bowl, mix Rich’s Versatie Gold cream with cardamom powder and honey.
• Assemble: Layer the cut fruits on a plate, top with Sitaphal puree, and drizzle the cream over everything. Garnish with pomegranate seeds and mint leaves.
• Serving: Serve the lemon chicken hot, garnished with sliced lemons alongside the fruit cream for a refreshing complement.
