Harira is a good option especially during cold days
Harira soup is a hearty tomato-based Moroccan soup made with legumes like lentils and chickpeas, fresh herbs, and warm spices including turmeric, cumin and cinnamon. It is typically thickened with broken vermicelli pasta or rice. This tasty lentil and chickpea soup is served in Morocco and other parts of North Africa anytime of the year, but it is especially associated with the month of Ramadan and is served most often to break the fast. Leila, a Moroccan chef, shared her recipe for Harira, a traditional Moroccan soup, and guided the attendees through the preparation process. The conversation also covered the preparation of other Moroccan dishes. The conversation ended with a discussion on the practice of fasting during Ramadan and its effects on the body and mind. They discussed their cooking process, focusing on the use of chickpeas, lentils, and spices. They agreed on the need for slow simmering and the addition of tomato paste, the use of parsley, cilantro, and celery for the end of the dish with the Chef providing guidance on the amount of flour and spices to use.

Ghee butter/ one egg
Bouquet of parsley

Two cups of small meet cube lamb or beef
Mexican vermicelli or rice
Vegetable oil
