whenever im lazy and don’t want to cook for a while I’ll just toss in random vegetables in my steamer and hope for the best.

I do this in a pot with various veggies, some low sodium vegetable broth, and spices. I always use greens for my soup too.

On Fridays, we have an “Empty the Fridge” stir fry of just about anything still in there.

Yeah, steaming is easy. Put cut vegetables in a pan with water at the bottom. Bring to boil. Turn off heat and cover for 4 minutes. It’s perfect every time.

My freezer is stocked with bags of mixed cut veg for exactly this reason. Just toss in the microwave and it’s done.
Unfortunately depression means that I’m making them more often than not. 🙁

The air fryer is a ⏩️ similar effect.. whole garlic bulbs, pumpkin seeds, the whole enchilada so to speak. I ferment a lot of veggies too, it’s good to have all the hot/cold, sour/spicy soft/crunchy stuff going on.

Lately this is a go to meal for my wife and I. Something like rice/lentils/quinoa boiled with steamed vegetables on top. So easy and always so tasty with all the sauces and spices we have on deck. For some things like tofu I do enjoy taking more time and baking or using oil and frying but no doubt this is the healthiest/easiest/fastest way!

That looks like a good combo. They got a frozen holiday mix like that now at Aldi with spinach and cranberries with these veggies.

Genuinely wondering: how many of you actually find vegetables enjoyable? Because to me, cooking is covering up the true taste and texture of them as creatively and deliciously as possible… And I really want to know if other people don’t feel like that.
