It’s a beef shank, cross cut section of a leg about 3/4 up from hoof. And it’s not freezer burnt like a lot of people are saying. It has ice crystals from moisture build up in the bag. It’ll be great for stew. Sear it in a Dutch oven. These in same pan, add some liquid and herbs. Absolutely leave the bone in throughout, awesome umami flavor there. Boil on medium for about an hour, then take it out to call. Reserve all the liquid but skim off and foam which may have formed from the rendering fat. Add carrots, onions, celery and potatoes, plus herbs to taste. Add in beef stock as the original liquid boils off. Or just water if you used stock to start. Cut up or shred the beef and add it back in. Once carrots are tender, thicken with a roux. Simmer for another ten minutes and you’re good to go with a nice hearty stew. A little red wine I. There also wouldn’t hurt!
