I love this. I know it’s a full and delicious meal in itself, but I still feel like I want a side dish… haha. Any ideas? Or maybe I’d just add a dollop of sour cream and some sliced avocado or guacamole. Anyway, I’m inspired to make Jack-o-peppers this weekend, thank you!!
