    Fulfilled two dreams at once – dine at a Noma pop-up and visit Japan for an excessive amount of fine dining including meals at Sezanne, L’effervesence and DEN.

    The Noma in Kyoto meal was both exciting and classic Noma concurrently. A gorgeous exploration of the ingredients and cooking styles of the region, the progression also included dishes you would expect from Noma like the Forest Broth or jellied crab head.

    Highlight dishes for me were the king crab, the abalone mushrooms, deer hot pot and ginko nuts. Each showcased the ingredients perfectly while presented in a “tongue-in-cheek” reference to classic Japanese cooking.

    The pairing was varied and lovely, floating between regions of Japan and beverage styles including two sake, a beer, a dark rose and more.

    I am so thankful to have been a part of this experience and to enjoy Noma’s hospitality in this new setting. The staff were as gracious as they’ve ever been and the dining room enviornment created transported diners to somewhere between Copenhagen and Kyoto.

    Looks interesting enough, not overly blown away by the desserts if I’m honest but glad you enjoyed it.

    How much did the whole experience set you back, if you don’t mind me asking?

    Impressive on getting the Den res too.

    I hope Noma continues taking bookings even if they totally revamp their approach and menu style.

    That’s awesome! I doubt Noma will do another pop up next year but I’m trying to make a similar Japan trip next year. Care to share photos from the other meals and tips for making the reservations you got?

    These are great photos. Out of curiosity how do you deal with lighting when restaurants are typically dark indoors?
