This was a crowd pleaser. I used Kenji’s pressure cooker Bolognese recipe for the ragu. I did add some mozzarella along with the Parmigiano Reggiano for the cheese layers. I should note I used no-boil noodles for my first time and had an epic fail with my first batch when hydrating them. They stuck together because I didn’t move them around during soaking and I had to use a second box; definitely need to separate or agitate them every few minutes. Really tasty though and nice to have some leftover emergency lasagna squares in the freezer.

This is just a normal lasagne for me as a European. I didn’t know the weird ricotta one existed. Turns out there’s a north south divide to lasagne making in Italy. Just like everything else
