I think I can reduce the liquid to 3 cups, add everything else in and cook on high for 5 minutes. I'm hoping for a thick stew like consistency. But will the cauliflower be absolute mush?

Any Instant Pot experts here?

Here’s how you can adapt the Millet Stew recipe for the Instant Pot:

    **Instant Pot Millet Stew**

    **Serves:** 4 to 6

    **Ingredients:**
    – 5 to 6 cups vegetable stock (low-sodium vegetable broth)
    – 2 pieces cinnamon stick (1-inch each)
    – 2 tablespoons grated ginger
    – 1 bay leaf
    – 1 large onion, peeled and cut into ¾-inch pieces
    – 2 large carrots, peeled and cut into ½-inch slices
    – 2 cloves garlic, peeled and minced
    – 1 cup millet
    – 1 large head cauliflower, cut into large florets
    – One 14.5-ounce can diced tomatoes
    – Salt and freshly ground black pepper to taste
    – ½ cup chopped cilantro (for garnish)

    **Instructions:**

    1. **Sauté Vegetables:**
    – Set your Instant Pot to the “Sauté” mode. Add the onion and carrots, and sauté for about 5-7 minutes, or until they start to soften. If needed, add a little water to prevent sticking.
    – Add the minced garlic and sauté for another minute until fragrant.

    2. **Add Spices:**
    – Add the grated ginger, cinnamon sticks, and bay leaf. Stir to combine.

    3. **Add Remaining Ingredients:**
    – Pour in the vegetable stock, millet, cauliflower florets, and diced tomatoes. Stir everything together to mix well.

    4. **Pressure Cook:**
    – Close the lid and set the valve to the sealing position. Cook on high pressure for 10 minutes.
    – After the cooking time is complete, allow for a natural pressure release for about 10 minutes, then carefully switch the valve to venting to release any remaining pressure.

    5. **Season and Serve:**
    – Open the lid, season with salt and pepper to taste, and stir gently. If the stew is too thick, you can add a little more vegetable stock or water to reach your desired consistency.
    – Serve hot, garnished with chopped cilantro.

Enjoy your hearty and nutritious Millet Stew made in the Instant Pot!

You might have to first cook the millet and spices (maybe with the onions too) then 3 mins or so before the end quick release and add veggies for another 3 mins. No veggie will survive 10 mins lol so much for AI
