    You have outdone yourself! That photo of the roux before/ after brings back memories of cooking with my family. Well done! I can literally taste the combination of the smoked sausage, fatty chicken thigh, and tender shrimp with that Cajun sauce that clings to everything. Slimy okra… The celery that is somehow Chris despite cooking for so long, and the onions to melt in your mouth.

    Thanks for posting this, it looks amazing and it really hits me with some nostalgia.
