The wheat semolina is gritty no matter what I tried, so if you can handle regular plain flour just fine, then use that or you’ll have gritty cake. Can also make it using a mix of polenta and wheat flour.
Recipe: For Ramekin size.
2 tablespoons wheat semolina.
1 tablespoon wheat flour to add texture.
1 tablespoon full cream milk powder.
1 egg yolk.
Some water.
Directions:
Place the milk powder into a mug or whatever your gonna use to mix it in.
Use a very small amount of water to create a sweet milk syrup, not watered down milk.
Add the flour to this.
Add the yolk on top.
Add a bit of extra water, so you can actually mix it and make it sort of like pancake batter.
Place in whatever your using, grease if needed.
Place in air fryer at 160c or 320f.
Check on it every 5-10 minutes, use a fork or toothpick to check if ready.
If it is not ready and the fork or toothpick is coming out dirty, reduce the temperature for the rest of the duration.
Anywhere from 120c or 248f to 140c or 284f.
Once ready remove it and enjoy it!
Another worthy mention if you don’t want flour at all, I made this one earlier.
Ingredients:
3 tablespoons full cream milk powder.
1 egg yolk.
About a teaspoon of salted butter.
Some water for the milk.
Directions:
Mix enough water into the milk to make it more wet then syrupy like the top one, to increase mass.
Add egg yolk and stir with a spoon into the milk.
Add melted salted butter, then mix again.
Pour into whatever your using and place it in the air fryer on 160c or 320f for around 10 minutes or until it gains color.
Once it has gained color, reduce the temperature to 120c or 248f to cook thoroughly.
Once done, enjoy! The more cooked areas, like the browner parts have this intense caramel flavor. Beyond that it tastes eggy and sort of like cheesecake.
Note: I don’t have a time for the 120c part, it will be done once it gains some browner bits, but since all you need to do is cook the egg, it doesn’t need forever like a regular cake. As long as the egg is cooked it is done. Giving it some browner bits gives you that strong caramel flavour, so browning it is totally worth it.
