First time cooking a real steak and it turned out so delicious. Dry brine for 3 hours, oven at 250 degrees till internal ~110, sear on cast iron with butter, garlic, rosemary and thyme.

I’m sorry that you bought these as your first real steak. You were ripped off and probably didn’t even realize it.
A ribeye steak has a few “sections”. The eye, the tail, and the cap. The vast majority of people, including myself, find the cap to be by far the most tender and flavorful part of the ribeye, and arguably of the whole steer.
Costco knows the cap is prized and they cut them off and sell them separately but for some reason still have the unmitigated gall to sell the remaining eye, without its cap for whole price, which is exactly what you’ve purchased here.
Glad you enjoyed it though. Next time try it with the cap on.

The cook isn’t bad for a beginner, but you gotta look up how to pick a steak in the store. Those aren’t worth 1/2 what you paid for.
That may be labeled “prime” but that doesn’t mean the steak is automatically gonna be high quality. Individually cut steaks don’t get graded, the entire cow does. Typically they’ll cut the animal in half head to toe, and grade it based off just that look. Which means some parts of the may be great, while others are lacking. You gotta pick them based off how they actually look, not just the label. Considering they have the cap removed, I probably wouldn’t have bought them regardless of any price.

You did nearly everything right, reverse sear, nice crust, wonderful med rare, perfect combination of herbs and seasoning. You just overpaid, especially without the cap. Glad you enjoyed it though. Cheers!
