This is the brand of kim chi I buy. I included pic of ingredients.
I buy a can every once in a while, but sometimes forget and don’t know if it’s still edible.
Info:
– I open the can, and place the can in a closed off glass container from ikea, I know the label says to keep it separate, but I do this so the brine stays higher up. (Should I not do this anymore?)
– the kim chi isn’t refrigerated in the supermarket, does this affect how long I can keep it? I know kim chi doesn’t often go bad, but idk how it works with kim chi like this. I’ve had food poisoning and have IBS so I’m careful with what I eat haha
I opened it on tuesday and it’s sunday now. Can I still eat it? Or how do I know it’s definitely off? Only if there’s mold?
Any info would be appreciated!! Labels that say “after opening limited shelf life” confuses me greatly 😃

It is best to store as written in the instructions
The canning process kills all of the bacteria that would otherwise preserve the kimchi. You cannot store this like fresh kimchi, it will go bad.
I would take whatever is left in the open can and put it in another container completely, but that’s just me. I feel like the metal would mess with the flavor in the fridge.
It isn’t refrigerated in the store which means when you bring it home you can put it in your pantry. Only refrigerate after you have opened. I have had this kind on my shelf before for emergencies, like I ran out of my homemade. I wouldn’t worry about the best by date too much, just keep an eye out to make sure mold doesn’t start growing on the top. Or it doesn’t have a funky off smell to it.
