Cook rice in chicken broth. When done finely grate lime and squeeze in lime juice. Season and add chopped cilantro. Enchiladas have sour cream, roasted chicken breast peppers & onions, Monterey Jack cheese, chilis, tapatio sauce, Macayo’s brand green enchilada sauce. Top with Mexican blend cheese.
