Had the great pleasure of enjoying this stunning bottle of Pavie the past weekend. I decided not to decant so I could watch the evolution a few ounces at a time. Immediately this gushed with vivid notes of blue fruits… think cocoa dusted blueberries & sappy cassis. With some air and time it began to reach equilibrium with notes of spice, glimpses of wet soil, loam, espresso grinds & milk chocolate. The structure was quite robust but completely velvety, this was gorgeous but the absolute icing on the cake came at the 2 hour mark when it really started to show a Rocky minerality & distinct notes of sea salt (think salted chocolate). Absolutely fabulous with a long, delicious life ahead.

    I remember when the ’01s started hitting the market (I’m old) and the reviews at the time weren’t great because they weren’t ultra-ripe fruit-forward young wines, but right bank especially has since shown itself to be pretty outstanding as an aged proposition. There was still value to be found back then and I think ’01 was especially overlooked because 2000 was seen as such a blockbuster vintage at the time. Some ’01s have shown themselves to be a touch green over the years but I reckon it’s mostly been a left bank problem. Many are supremely elegant and refined in style.
