Chicken Scallopine with Lemon Sauce
Serves: 1
Prep Time: 8 Minutes
Ready In: 16 Minutes
Ingredients
1 thick chicken breast, finely sliced into at least 5 slices
1/2 cup of Prosecco wine
The juice of 1/2 lemon
Extra virgin olive oil (EVOO)
Rice flour for dusting
Sea salt and black pepper to taste
Capers
Directions:
1. Flour the chicken on both sides.
2. Heat olive oil in a nonstick pan.
3. Place chicken in the pan and cook over low heat (about 2 minutes) until it starts to cook and turn white. Add the Prosecco, then flip. Be sure to not let the chicken brown.
4. Squeeze the lemon and add the juice and add the capers.
5. Cook until the sauce starts to thicken and sprinkle some rice flour to create a creamier sauce. Keep shaking the pan to thicken the sauce and prevent the chicken from sticking.
