Bought this from a local albertsons for a quick taco night. What do they mean by “beef inside skirt steak”? is it skirt steak wrapped around some other cut of beef?

Inside skirt steak is just the name of the cut. It’s from below the sternum. It’s a great cut for tacos and fajitas.

There’s an inside skirt steak and an outside skirt steak

Outside skirt is typically thicker and more tender, inner skirt is thinner and chewier. Outside is more often eaten as a steak while inner is used for fajita or taco meat.

Like everyone else said, it’s just the name for the cut of meat.

My personal favorite cut when buying from a good traditional butcher shop is asking for outside skirt skin off blocked.

Order it that that way, take it home and marinate with what ever your favorite way is overnight.

Throw is it on the grill and you’ll be in for the best meal of your life.

One of the if not the most tender and flavorful cuts of eat you’ll ever have.

Just don’t fuck it up the marinade and the grilling or that’s on you.
