Sirloin, 137 for 3 hours, seared with avocado oil and topped with butter. I dont eat seafood so I had to make this for myself while cooking 10lbs of king crab legs and lobster tails for the rest of the fam. They were jealous of my plate and want me to do steaks for next sundays dinner. Fine by me!
