- 3 big potatoes
- Pork belly (Aldi store)
- Bell peppers
- Garlic
- Cheese (200g)
- 1 cup of milk
- Seasonings
Recipe:
1. Season and marinate your pork belly chops
2. Let the marinate sit overnight or if you’re in a rush like me 30mins in the freezer
3. Place the chops in the oven @210 degrees Celsius for 30minutes – flip it half way through (throw in your bell peppers and garlic cloves at this time) – until golden brown or done to your preference
4. Boil the sweet potato until soft and drain the water
5. Add milk, cheese and 2 tbsp of salted butter to the sweet potato then mash it up
6. Make a side sauce – I did a bbq cocktail sauce (mix honey, soy sauce, pesto, bbq sauce and stock water)
7. Voilà
Not 15mins but it’s a nice go to Sunday hearty meal if you have an extra 15’🤪
