I'm having shoulder surgery soon and figured I'd better do some meal prep before I go in a sling for several weeks. I did freezer prep 1 & 2 from the website below. 10 meals, and I anticipate that each meal will be at least 6 servings. I prepared everything over the course of two afternoons, 6 hours the first day, 2 hours the second day. I spent $250 on all the food items including a few spices. Probably half of what I bought was organic and/or name brand.

    I have a question. Do the quesadillas stay closed? I’m assuming you crimp the edges with a fork? I saw a crimping kitchen gadget and have considered buying it but if a fork works then I’ll do that instead.
