Meatball Sub with homemade baguette

    sauce
    2 tbs of olive oil
    1 onion
    1 carrot
    1 Celery
    1 clove garlic
    2x roasted peppers
    Splash of red wine
    2 tin tomatoes
    Pepper
    Salt
    Simmer for 20 mins no lid

    Meatballs
    Chopped parsley
    2 cloves of garlic
    1 egg
    500g pork and beef
    100g bread crumb
    Salt
    Pepper
    Olive oil
    100g grated parmesan

    Bind the ingredients
    Make table tennis size balls
    Dust the balls with little flour

    Blend the sauce

    In a pan with some olive oil
    Fry the meatballs till slightly brown
    Then place into sauce and simmer for another 15mins

    On a baguette add some of the sauce and meatballs
    Get some mozzarella cheese or cheese slices
    Bake for 3 mins 200c oven
