Do I cut these down or let them do their thing over winter in Washington State? Don't judge the other issues, we are just dealing with the onions right now. 😁. Lots of newer onions growing next to the huge established ones.

mine is exactly like yours and i’ve left it over winter like that and it was perfectly fine – looked a little sad during frosts but quickly bounced back when the sun came out and i actually started watering it. I’ve also left the bulbs on mine, as i’ve seen it attracts bees, however if you’re concerned in winter you could trim those ones so it’s energy doesn’t go to keeping the bulbs alive

Just leave them. They’re not going to be very good next year though. I replant seed each year.

Your garden looks awesomely wild, I love it.
As to the onions leave them, cover then with a thick layer of straw to keep them warm and your up and running next spring. Pop out the big ones as you want to eat them

I have a bunch (pardon the pun) still in the ground – 8B (also PNW) – I just harvest as I want them. They’ll be fine, but they will bolt in the spring, so best to eat them over winter.
And Feb is the time to start onion seeds for next year’s onions!
