    Ribeye is a fatty cut, so it can be overcooked and still tender because of the fat content.

    If it bothers you so much, just chop them in a food processor and make some sauce with bone broth, herbs and butter, reduce it down, and add chopped ribeyes in it, and serve it over rice.

    Honestly, lean into it. Cube it small, sear all sides hard and make it into a tasty steak burrito/taco meal or stir fry into noodles or rice, particularly if you save most as leftovers. My wife enjoys eating steak in these less traditional ways and sometimes I don’t mind it either.

    Even overcooked ribeye is still good. It’s such a fatty cut that it has a lot of wiggle room with doneness.

    Agree, it’s not inedible, lol A1 or Heinz 57 might be needed, but we have all overcooked one or 6.

  15. Eat the most rare pieces normally. Chop up the most done pieces with a bunch of fat and saute it as mecican taco meat. Add cumin, oregano, etc

  18. I’d turn it into fajitas or something where chopped steak is appropriate. That or throw some A1 on it and eat as proper steaks.

    It’s not that bad if you are going to over cook a steak atleast you did it to one with a lot of fat so it’s still decent to eat. I honestly prefer ribeye and fatty cuts to be medium, you just over shot it by a few degrees.

    Its a little over done for me but I would say it’s acceptable for a ribeye I would prefer a ribeye slightly over than under and fat not rendered etc
