I made some homemade gnocchi to recycle all the cheeses I used on the previous pizza night, because the rule in the kitchen is “nothing is thrown away”.
They won’t be very aesthetic as a result, but they are really good.
why you don’t try to make it?
Recipe for 6 people:
Ingredients for the gnocchi:
1kg of potatoes (maris pipe potatoes)
400g of flour
1 large egg
a pinch of salt
a pinch of nutmeg
Ingredients for the cheese sauce:
100g gorgonzola
70g parmesan
70g cheddar
70g mozzarella
50g of butter
40g milk
Procedure:
Boil the potatoes for about 20min until a fork can penetrate them without difficulty, drain the water, peel them and smash them and add all the flour, eggs, pinch of salt and nutmeg and mix everything until you obtain a homogeneous mixture, and let it rest for half an hour.
After this period of time, sprinkle the work surface with plenty of flour and start rolling the dough until you obtain small cylinders with a diameter of 1.5cm and cut into small pieces of approximately 1.5cm.
Let’s start preparing the cheese sauce, put the piece of butter in a pan and once melted, over a low heat add all the cheeses with some milk and if you like you can spice it up with a teaspoon of nutmeg, black pepper, sage.
In another pot we put the water to boil, add a spoonful of salt and add our gnocchi, which we will boil until they rise to the surface, and as soon as they are on the surface, we add them to the pot with our cheese sauce stir for a couple of minutes and voila!.
Ready to plate and serve your fabulous 4-cheese gnocchi homemade.
