Jamaican Jerk chicken

    Jamaican Jerk chicken with Coconut Rice and Beans

    flavours work without being too spicy

    marinade
    1 whole bell pepper
    4 habanero or scotch bonnet
    1 bunch green onion
    1 ginger
    4 cloves garlic
    1 tbls Jamaican seasoning
    1 tps all spice or Chinese 5 spice
    1 tps coriander seeds crushed
    2 tbls paprika
    1 tps thyme
    1 tbls soy sauce
    3 tbls olive oil
    1 tbls brown sugar
    1/2 tbls white pepper

    rice
    1 cup of pidgeon peas, or can use red or kidney beans
    ½ cup of coconut milk
    ½ tbls salt
    ½ tbls sugar

    method
    watch chicken pieces in water with a lime
    add all ingredients bliz in a blender (except spices)
    score chicken
    mix rub and seasoning (marinade for min 1 hour but best overnight to 24hrs)
    rub onto chicken (note wear a glove or hands will burn)

    (best way imo to get charing and keep the chicken still moist)
    skillet (high 10 mins)
    Then oven 220C for 20mins

    Or full in oven oven
    220C at 30-35 mins (turn and base half way)
