90/10 coarse wheat and rye, baked in a claypot for 35min, 20min with the lid on 15 without, I also throw a couple of ice cubes into the oven when the dough goes into the pot

    I know you’re not supposed to cut hot bread but I don’t care. I’ll wait for my bread to cool completely 95% of the time. But there’s nothing better than a slice of warm country loaf with butter
