I haven't shared photos before, but I'm proud of how this loaf turned out. Lovely sour flavor and made for some delicious BLTs. My process is definitely less scientific or precise than most of y'all. I pretty much eyeball everything. Sometimes it works… and sometimes it doesn't. Today it worked.
Recipe:
375g water
50-100g starter
500g flour
9-12g salt
I don't really bother with the autolyse. I mix the starter into the water with a fork, then add the flour and salt. 4 rounds of stretch and folds with 30 minutes in between each. Then BF for… I don't know. A while? I think this one was around 3 hours. Then into the fridge until I feel like baking (sometimes later that day, sometimes later that week). Pre heat Dutch oven in 500 degree oven. Then add scored loaf on a piece of parchment paper to the Dutch oven. Lower the temperature to 450 and bake covered for 30 minutes. Uncover and bake an additional 15ish depending on color. Sometimes I lower the temp to 400 for that last 15 minutes. Kinda depends on the loaf.
Anyway… it was tasty and I found it kinda pretty too.
