Focaccia I made at the office today

    So, on Monday afternoon, me and my coworker mixed 1kg of 00 flour, 800g of water, 7g active yeast and 1dcl of extra virgin olive oil and put it in the fridge in our office kitchen. Today at 9am (40 hour cold fermentation) we folded it once and put it to rise in the pan for 1.5 hour (I wanted to wait 3 to get it all bubbly but we had a meeting later so it couldn’t wait that long). In the end we put rosemary, coarse salt,olive oil on top, fingered it good and put it in the 220’C oven for 20 mins and this is the result 🙂
