yes, this is a thing, yes it is good. BUT you should NOT do it on briquettes — LUMP ONLY

It really works. And it’s great. I do it on mesquite coals. But you need to make sure your coals are rocking. They need to be fully ready. And when you turn the meat, you need to use the other side of the bed that hasn’t been smothered in raw meat. The coals need time to bounce back.
