I have been making Smitten Kitchen’s Stuffing Stuffed Onions (sometimes with the onions and sometimes just the stuffing) for 10 years and thinking about trying something different. I just sub vegan butter and veg stock. There’s just something about the roasted cashews and spinach that I love but curious if anyone has another tried and true favorite they make year after year.
