Not sure if this is a dumb question. If I were to make a bunch of these and freeze them and then airfry them to heat them up would the food still be ok?

From a food poisoning standpoint they would be fine. Frozen and heated up tomato and lettuce would be garbage and you will regret it instantly.
The tomato and lettuce wouldn’t bother me reheated, not sure on frozen and reheated. Make a sandwich and trial it I reckon.
Fresh vegetables’ texture is destroyed by freezing.
I’d substitute the tomato with something like salsa, and add the lettuce right before eating it, or just not use any
Freeze the tortilla with just the cooked beef patty and cheese inside- but no sauce. You can heat it up in your air fryer from frozen, then open it up and add any sauce, lettuce and tomato just before eating it.
Pita bread, rolls, any bread, cheese and meats all freeze really well, as does spaghetti sauce. Don’t freeze raw vegetables— cook them first in a saucy stew/soup/curry/casserole before freezing.
