Would you eat this? Hubby and I saw a dish on TV in a non-food related reality show. We immediately fell in love. We couldn’t see it well, but dang it looked good. So of to the store we went, with a vague idea of zuccini, burrata and cappelini. This is the result. Recipe in comments.

    I cut the zuccini in round slices. This was basically the only part of the dish we could see on TV, the sliced zuccini. I would never have though to do it like that (I usually dice zuccini). I baked the slices in bacon fat (olive oil would work too) with salt and freshly ground black pepper. Sliced some medium-sized tomatoes to match the zuccini, and also baked them in the bacon fat with salt and freshly ground pepper. When those were done I baked some chicken in the same pan, also with salt and freshly ground pepper. Also I boiled the capellini in water and some salt (linguine would be good too!).

    I briefly microwaved the vegetables so they would be warm again, then served as in the picture, with the burrata being added on last minute (cold from the fridge). I also added some cherry tomatoes and basil for decoration (I ate my basil, hubby didn’t).

    Not figured in the picture, because I forgot: I roasted some pine nuts in a pan (no oil or other fats, they produce their own), and added those on top. Also I made some fresh pesto, by mixing pine nuts, parmeggiano cheese, olive oil, fresh basil, lemon juice, salt and pepper together. Mix well (with a hand blender or other similar tool), and don’t add to much oil.
